Giraffe's Tangy Low-Carb Taco Soup


We thought we'd spice up our dinner last night with something easy but hearty. 

So, we decided to cook one of our favorite soups - Giraffe's Tangy Taco Soup.  

This soup has an unbelievable taco flavor and like many of our other recipes only requires a handful of ingredients.  😁

Our ingredients for this week's recipe include:


  • 8 oz. Cream Cheese
  • 2 Pounds of Hamburger
  • 2 - 14 oz. Cans of Beef Broth
  • 2 - 10 oz. Cans of Rotel Diced Tomatoes and Green Chilies
  • 2 - 7 oz. Cans of Mushrooms
  • 1 Tbsp. Cumin
  • 1 Tbsp. Chili Powder
  • 1 tsp. Minced Garlic
  • 1/2 Cup of Heavy Whipping Cream
  • 1/2 Cup of chopped onions
We'll begin by placing our hamburger in a large pot, will cover and fry on medium heat until browned.





After our hamburger has browned, we'll drain our grease into a disposable plastic container, and will return our meat to our stove.  

Now it's time to add our onions and garlic to our mixture.






We'll continue to add our Cumin and Chili Powder to our hamburger, and will then mix together.



Next, we'll cut our cream cheese into little blocks and will also add to our mixture.  




We'll then, mash our cream cheese into our hamburger and will stir until our cheese is fully blended.


Next, we'll pour our cans of mushrooms, Diced Tomatoes, Chilies, and beef broth, along with our heavy whipping cream into our mixture, will stir, cover, and bring to a boil.








Once our soup has boiled for about 10-15 minutes, we'll then reduce our heat to medium-low and will simmer for an additional 15-30 minutes, uncovered.

 COOKING TIP:  The longer our dish is simmered, the more our flavors are enhanced. 

ANOTHER COOKING TIP:  Simmering our soups and casseroles, while uncovered, allows our liquid to evaporate and our dish to slightly thicken.

Once our soup has finished cooking, we'll remove our pot from our stove.  

Now's our time to bring our accompaniments out of our fridge to add to our succulent soup.  


We like to add sour cream and shredded cheese to our dish. 

 Since our soup is somewhat spicy, we'll add sour cream, which seems to cool our soup, while also adding richness.  

And as you've probably noticed, from other posts, we love to sprinkle our cheese over everything.

And...our soup is no different.  😂



There we have it!!  

A spicy, hearty, and zesty low-carb alternative for any meal! 

Since, we had leftover Quiche in our freezer, we decided to pour our leftover Taco Soup over our thawed Quiche.  

For some reason, the two complimented each other and were deeelicious!
