Smokey's Smokin' Low-Carb Cream Cheese Quiche


Eggs aren't just for breakfast anymore!  

We're always looking for different ways to make our dinner quiche delicious and special. 

Usually, we'll make our quiche with canned mushrooms and spinach.  Well, this time, we thought we would shake it up a little and add some fresh ingredients, such as mushrooms and a fresh sweet red onion. 

Adding to our excitement, we thought we would also include cream cheese!

Those few ingredients made our quichy experience a little more hearty tasting, fresh, and definitely filling.

Preparation time was only 5-10 minutes, while cooking time was another 50 minutes.

The ingredients we used for this week's recipe include:

  • 12 Eggs
  • 4 Cups Shredded Cheese of Choice
  • 2 - 8 oz. Packages of Cream Cheese
  • 2 tsp. Minced Garlic
  • 1 1/2 tsp. Italian Seasoning
  • 1 Cup Heavy Whipping Cream
  • 1 Cup Frozen Spinach
  • 1 Package of Sliced Bacon
  • 1 Package of Sliced Fresh Mushrooms
  • 1 Red Onion
     We'll begin by slicing our bacon into 1 inch sized pieces and will place them in our frying pan, off to one side.


We'll then, remove our onion's skin, will chop into tiny pieces, using our 1-Second Slicer, and will place in our skillet, next to our bacon pieces.

Next, we'll add our fresh mushrooms, spinach, and garlic to our skillet, will cover and will initially, cook on medium heat for about 10 minutes.






While our mixture is cooking, we'll beat our eggs in our mixing bowl, until they are thoroughly blended.





We'll then, add our Heavy Whipping Cream and will place aside.


Next, we'll melt our cream cheese, in our microwave, for about 1 1/2 minutes.

This will soften our cheese, allowing us to mix our ingredients a little easier.



We'll then, add our Italian Seasoning to our egg mixture, along with our softened cream cheese, and will whisk together, until fully blended.







We'll then, place our egg mixture aside.


We'll now, uncover our skillet mixture and will stir our ingredients together, until they have been fully mixed. 




 We'll, again cover our mixture and will cook for another 10 minutes, or until our mushrooms are tender and onions translucent.  




After our skillet mixture has finished cooking, we'll turn off our burner.

We'll then, spray our baking pan with cooking spray and will preheat our oven to 350F degrees.





Next, we'll pour our vegetable bacon mixture into our baking pan and will evenly spread throughout.




We'll then, pour 2 cups of our shredded cheese over our sauteed vegetables.


Next, we'll pour our egg mixture over our cheese, will then, sprinkle our remaining 2 cups of shredded cheese over the entire dish, and will bake in our oven for 30 minutes.





After our 30 minutes have passed, we'll do our fork test to see if our quiche has finished baking.


We'll insert our fork into the middle of our quiche. If our fork is clean, when removed, our quiche has set and is ready to eat.  


And sure enough...our fork is clean and our quiche is done baking!


We'll now, allow our quiche to rest for about 10 minutes, so that our dish will somewhat solidify and will be easier to serve.


Voila!!

Our quiche is absolutely egg-cellent!  😅😅😅


Our creamy and low-carb quiche is just that ~ full of cheesy deliciousness, coupled with the freshness of our vegetables, but without the carbs, that usually accompany such a yummy dish.


We especially enjoy the taste of our sauteed mushrooms, which allows our egg dish to taste like a scrumptious entree from a French Parisian Cafe.
