Giraffe's Creamy Low-Carb Spinach and Artichoke Dip


A few days ago, we were shopping at our local grocery store and came across our favorite Spinach Artichoke Dip. We wondered how difficult it would be to create our own low-carb version. 

Well, the low-carb version was not difficult at all to make and only required a few ingredients.  

After making our Creamy Low-Carb Spinach and Artichoke Dip, we ended up eating our concoction as a side dish.  Our dip tasted like a creamy and cheesy version of our Creamed Spinach. We couldn't believe how yummy our dish was and how little carbs were present.  

Our dip required only 5 minutes of preparation time and another 25 minutes to bake.

The ingredients we purchased were:

  • 1 10 oz. Package of Chopped Spinach
  • 1 14 oz. Can of Artichokes (Drained)
  • 1 Cup of Parmesan Cheese
  • 8 oz. Whipped Cream Cheese
  • 1 tsp. Garlic
  • 1/4 tsp. Black Pepper
We'll begin by placing our Whipped Creamed Cheese into our mixing bowl.

We decided to use Whipped Cream Cheese, versus the block so that we could mix our ingredients together easier.  


We'll then add our thawed Spinach, Artichokes, Garlic, Parmesan Cheese, Pepper, and will stir until completely blended.







Next, we'll spray our casserole dish with cooking spray and will preheat our oven to 350F degrees.



We'll then pour our spinach mixture into our dish, cover, and will bake in the oven for 30 minutes or until slightly browned.




After our concoction has baked, we'll remove from our oven, stir, and will allow to cool slightly before serving.



When we first tasted our dish, we sliced up some vegetables to accompany our creation ~ some peppers and olives.  



Our Spinach and Artichoke dip was so rich, creamy, and absolutely delicious, that we couldn't seem to get enough.  Our dip definitely tasted store bought.  

That's why we decided to serve our dip as a side dish to our meal.  Either way you decide to eat the dip, you will not be disappointed.
