McGiraffe's Low-Carb Big Mac Salad


We can still remember the Big Mac from our childhood days, that made us salivate, by merely observing its photo on the menu.  

Hamburger patties topped with lettuce and their special sauce offered an incredible flavor.  Unfortunately, the carbs went directly to our thighs.  We're still salivating,  as we speak.  😂

However, we have a recipe for a delicious Low-Carb Big Mac Salad that would trick you into thinking you were eating the real thing!

The best part - there are little to no carbs.  😁

Preparation and cooking time is only 15 minutes each.  

This week's ingredients include:


  • 4 Roma Tomatoes 
  • 4 Tbsp. + 1 Cup Sugar-Free Relish
  • 4 tsp. Prepared Mustard
  • 3 Pounds Ground Beef
  • 3 Tbsp. Sweetener of Choice
  • 2 Cups Shredded Cheese or Choice 
  • 2 tsp. Vinegar
  • 1 Head of Iceberg Lettuce
  • 1 Avocado
  • 1 Cup Mayonnaise
  • 1 tsp. Paprika
  • 1/2 tsp. Ground Pepper

We'll begin by adding our Ground Beef and Pepper to our skillet, will cover, and cook on medium heat for about 15 minutes or until our meat is no longer pink.

We'll continue to stir our meat every 5 minutes or so, to avoid our beef from burning.





Next, we'll add our Mayonnaise, 4 Tbsp. of relish, mustard, vinegar, paprika, and sweetener to our food processor and will blend on high for about 30 seconds, or until we have pureed our mixture.

If a food processor isn't available, a whisk or electric mixture would work just find.












We'll then, place our "dressing" in our refrigerator to chill for about 15 minutes. 


Next, we'll top our tomatoes and will discard them.



We'll then, slice our tomatoes into fourths and will chop with our 1-Second Slicer, and will place aside.








Since our Ground Beef is absent of any pink coloring, our meat has finished cooking.  


We'll, remove our beef from our stove, will drain our grease into our plastic container and discard, and will then, place our hamburger aside.




Next, we'll chop our lettuce and will place into our large mixing bowl.






We'll then, add our tomatoes, cheese, remaining 1 cup of relish, and will stir.





Next, we'll add our ground beef and our chilled dressing to our veggie mixture and will stir.




We'll then, slice and pit our avocado and will place aside.





Finally, we'll scoop out yummy salad into our bowl and will top with our sliced avocado.  


Voila!!

Our McGiraffe's Low-Carb Big Mac Salad is ready to be served.

We're salivating all over again!  The aroma itself is amazingly tantalizing! 

Our ground beef is moist, our veggies are fresh, and all is coated with our authentic tasting creamy dressing!

Our creamy avocado only adds to our dinner of enjoyment.


We feel as if we are eating a Big Mac on a bed of lettuce!

This recipe has definitely become another one of our favorites.

Another perk for our recipe is that we were able to enjoy our salad for 2 dinners. 

Although our lettuce wasn't as crispy the following day, the flavors had deepened even more.
