Smokey's Meaty Low-Carb Noodle-less Lasagna


Italian Night is one of our favorite dinner menus of all time.  We're usually creating different sorts of low-carb pizzas.  However, we dearly miss our pasta dishes.

We decided to bake a low-carb lasagna, created without noodles! 

Just how we've used cream cheese, as a substitute, for our pizza crust, we're using cream cheese as a substitute for our lasagna noodles!

Preparation time is about 25 minutes, while our cooking time was about 1 hour and 30 minutes.

We shopped for our ingredients and purchased:


  • 2 Pounds of Ground Beef
  • 2 - 10 oz. Packages of Spinach
  • 2 - 8 oz. Cans of Mushrooms
  • 2 - 4 oz. Cans of Tomato Sauce
  • 2 - 8 oz. Blocks of Cream Cheese
  • 4 Ripe Tomatoes
  • 4 Cups + 2 Cups Shredded Mozzarella Cheese
  • 2 Eggs
  • 1 Chopped Small Onion
  • 1/2 Cup + 4 Tbsp. Parmesan Cheese
  • 1/4 Cup + 1 Tbsp. Sweetener
  • 1 1/2 Tbsp, Oregano or Italian Seasoning
  • 2 tsp. + 1/4 tsp. Garlic Powder
  • 1/2 tsp. Chili Powder
  • 1/2 tsp. Ground Pepper
We'll begin by placing our ground beef in our pot, and will cook on medium heat.



We'll then chop our onion, add to our ground beef, cover, and will periodically stir until fully browned.  









We'll then, place our hamburger mixture aside and will create our homemade spaghetti sauce.

We'll slice off our tomato cores, and will cut into fourths.  




We'll then cube our tomatoes with our As Seen on TV 1-Second Slicer.  

This product is amazing!  We use this to slice most of our vegetables and in record time. 



Next, we'll pour our tomatoes into our pan, and will cook on medium heat.



We'll then add our mushrooms, tomato sauce,  2 tsp. of garlic powder, Oregano, Chili Powder, Pepper, and 1 tsp. of sweetener.






We'll then stir our mixture, cover, and will cook for 20 minutes or until our tomatoes have softened.  

Next, we'll add 1/2 cup of Parmesan cheese and another 1/4 cup of sweetener.



We'll then stir our sauce and will cook for another 10 minutes.




We'll now pour our sauce over our ground beef mixture and will blend together.






We'll next, make our cream cheese spinach filling by softening our cream cheese in our microwave for 1 minute.



We'll then, beat our cream cheese, eggs, and 1/4 tsp. of garlic powder until fully mixed together.





Next, we'll cook our spinach in our microwave for 5 minutes.



We'll then remove our spinach, stir, and will cook for another 3 minutes, or until fully cooked.




We'll then, drain our spinach of any excess liquid, will pour our cream cheese mixture over our spinach, and will stir until fully blended.




Finally, we'll begin to construct our noodle-less lasagna.

We'll spray our baking pan with cooking spray and will preheat our oven to 350F degrees.



Next, we'll pour half of our hamburger mixture into the bottom of our pan.


We'll then, evenly spread our cream cheese spinach mixture over our hamburger layer.



Next, we'll evenly sprinkle 4 cups of Mozzarella Cheese over our cream cheese spinach mixture and will top with our remaining ground beef.



We'll then, sprinkle 4 Tbsp. of Parmesan Cheese and 2 cups of Mozzarella Cheese over our hamburger mixture and will bake in our oven for 30 minutes or until our lasagna is bubbling.




We'll remove our lasagna from our oven after 30 minutes and will allow to cool for another 1 hour.  

The casserole will thicken the longer the lasagna rests.


Voila!! 



Our meaty, cheesy, noodle-less low-carb lasagna is amazing

...and our homemade sauce is exquisite!!  

You would never believe that our dish was noodle-less.
