Giraffe's Low-Carb Meaty Portobello Parmesan


We LOVE Italian food and especially any recipe with Parmesan in its name, whether it's Eggplant, Chicken, or even Veal Parmesan.  Well, we found this recipe for a Portobello Parmesan and thought we would give it a try.  

 What an incredibly delicious and someone healthy dish. We create our tomato sauce from scratch, which allows our Portobello Parmesan a fresh taste. You palates will not be disappointed. 

Preparation was a mere 10 minutes, while the actual cooking was approximately 1 hour and 15 minutes.  

You'll need a few ingredients for our yummy recipe:


  • 2 Pounds of Ground Beef
  • 1 15 oz. Can of Tomato Sauce
  • 2 4oz. Cans of Mushrooms
  • 3 Ripe Tomatoes
  • 1/2 Chopped Onion
  • 10 Portobello Mushrooms
  • 1 Package of Mozzarella Cheese
  • 1/2 tsp. of Black Pepper
  • 1 tsp. of Minced Garlic
  • 1 tsp. of Baking Splenda
  • 2 tsp. of Italian Seasoning
  • 1 Cup of Parmesan Cheese
  • Cooking Spray
We'll start by creating our meat sauce from scratch.  

First, we'll place our ground beef, chopped onion, and garlic in a skillet and will cover and cook on medium heat until fully browned.








We'll then prepare our tomatoes.  Since we don't have a food processor or a blender, we use a simple technique for creating our fresh stewed tomatoes.  

First, we'll cut out and dispose of the tomato stem, slice our tomatoes into fourths, and will place in our Ziploc bag. We'll then, use the heals of our hands to smash our tomatoes. 

Voila - we have our stewed tomatoes.  





We'll then place our tomatoes aside for merely a minute or two.

We'll continue by adding our tomato sauce, mushrooms, stewed tomatoes and will stir.





Next, we'll add our Parmesan Cheese, Baking Splenda, Italian Seasoning, and pepper to our ground beef mixture and will stir again, until well blended.









We'll now cover and continue cooking our meat sauce for another 15-20 minutes on medium heat, until the tomatoes have fully cooked.  

We notice our tomatoes have fully cooked by their shrivelled, soft, and stringy appearance. 




While our sauce is cooking, we will now prepare our mushrooms.  

We'll begin by placing our mushrooms in our colander and will rinse them with cold water.



Next, we'll gently clean our mushrooms to remove any dirt or grime and will place on a paper towel to dry.



We'll then remove the mushroom stems and discard.


Next, we'll line our baking pan with foil, spray with cooking spray, and preheat our oven to 450F.



We'll, then place our mushrooms on the foil.


Next, we'll spoon a large amount of meat sauce into each mushroom cap.



We'll then slice our Mozzarella Cheese into 10 slices and will place one slice on each mushroom.





We'll continue by placing another generous dollop of meat sauce over each mushroom. 


We'll then sprinkle 1 Tbsp. of Parmesan Cheese over each mushroom.


Finally, we'll spray each mushroom with our cooking spray to enhance the cooking process.

 We'll then place our Portobellos in the oven for 15 minutes, and will bake until the tops are golden brown.





The delightful aroma is probably permeating your kitchen and living space, signaling that it's time to enjoy this succulent and meaty Portobello Parmesan.


Usually, this dish would last us for 2 dinners. However, the mushrooms were so thoroughly tender, meaty, and delicious, that we devoured them all in one setting.
