General Smokey's Spicy and Sweet Low-Carb Chicken


We've been anxiously looking forward to making this low carb General Tso's Chicken for quite some time.

And we are glad we did!!  Our General Smokey's Spicy and Sweet Chicken is absolutely deeeeelicious!  We think this is currently one of our favorite dishes of all time.  

General Smokey's Chicken is delightfully sweet and typically spicy, as the real General Tso's.  

Preparation time was 20 minutes and cooking another 1 hour and 30 minutes.  

Our list of ingredients include:


  • 8 Tbsp. Coconut Oil
  • 8 Tbsp. Olive oil
  • 6 Tbsp. Rice Vinegar
  • 5 Tbsp. Soy Sauce
  • 4 Tbsp. Reduced Sugar Ketchup
  • 4 Tbsp. Sweetener
  • 4 Tbsp. Sesame Oil
  • 2 eggs 
  • 2 Tbsp. Chopped Green Onion
  • 2 tsp. Hoisin Sauce
  • 2 tsp. Red Chili Paste
  • 2 tsp. Red Chili Flakes
  • 2 tsp. Minced Garlic
  • 1 1/2 Bags of Pork Rinds
  • 1 Family Pack of Boneless, Skinless, Chicken Thighs (or chicken part of choice)
  • 1 tsp. Minced Ginger
  • 2/3 Cup Almond Flour
  • 1/2 Cup Chicken Broth
  • 1/2 tsp. Xanthan Gum
We'll begin by smashing our Pork Rinds.  

Since we don't have a food processor, we'll place our rinds in a Ziploc Bag and will merely apply pressure, until our contents are Pork Rind dust. 

We'll then, place in our mixing bowl and will set aside.







Next, we'll add our Almond Flour, will stir, and will also, set aside.




We'll then, beat our eggs and will also place aside.




Now, we'll cut our chicken thighs into bit sized pieces and place aside.  



We'll then, place our chicken, egg, and Pork Grind mixture in close proximity to our skillets.

That'll make it easier to dip our chicken and then drop into our skillets to fry.


Next, we'll pour 2 Tbsp. of Olive and 2 Tbsp. of Coconut Oil into each of our 2 pans and will warm them on medium heat, until our oils begin to slightly smoke.  

That will be our sign that our oil has heated sufficiently, in order to cook our chicken.

(We weren't able to fry all of our chicken pieces in 2 pans.  We, therefore, fried 4 pans of chicken pieces)






Since our oil is slightly smoking, we are ready to begin the frying process.

We'll then, dip our chicken pieces into our egg mixture, into our Pork Grind mixture, and finally into our oil.





We fried our chicken for roughly 10 minutes and then flipped each piece over, cooking for an another 5 minutes.

We're merely trying to brown our chicken on each side, creating a crust. 

Don't worry about cooking the chicken all the way through, as our chicken will be roasting in the oven for another 45 minutes.  

If we thoroughly cook our chicken pieces on the stove, our chicken might be dry, by the end of our baking process.




Next, we'll preheat our oven to 350F degrees, will line our baking pan with Aluminum Foil, and will spray with cooking spray.




We'll then, transfer our cooked chicken pieces from our skillets to our greased baking pan and will set aside.




Now, it's time to make our tasty and delicious sauce. 

We'll add our Chicken Broth, Rice Vinegar, Soy Sauce, Ketchup, Sweetener, Sesame Oil, Hoisin Sauce, Chili Paste, Garlic, Chili Flakes, Ginger, Xanthan Gum, and Green Onion to our mixing bowl, and will whisk, until thoroughly blended.






























Next, we'll pour our sauce over each piece of  chicken, thoroughly coating them all, and will place in our oven for 15 minutes. 




We'll then remove our chicken, will flip each piece, and will return them to the oven for another 15 minutes. 

Flipping our chicken pieces every 15 minutes will allow our chicken to be thoroughly coated with our yummy sauce. 

You'll notice the sauce gradually thickening with every 15 minute interval.





After our second 15 minute interval, we'll remove our chicken from the oven, will again, flip our pieces, making certain that each piece is coated in our sauce. 

We'll then return our chicken to our oven, for a final 15 minutes.



Voila!!!  



We feel as if we are dining in a Chinese Restaurant!  The sweet aroma of our General Smokey's Chicken is permeating our apartment and tantalizing our taste buds.  

Our chicken smells and tastes EXACTLY like General Tso's Chicken!!!

They are not too sweet, but nice and spicy and tender.

It's unbelievable that our chicken dish is low-carb. However, we are ecstatic that it is! 

We decided that our Cauliflower Fried Rice would accompany our dish very well. However, instead of using shrimp, we substituted Low-Sodium Spam.  

MMMMmmmmmmm!   Yummy!!!
