Giraffe's Sweet and Buttery Low-Carb Cream Cheese Pound Cake


About a couple of weeks ago, we were craving something sweet for our after dinner treat.

We looked in our refrigerator and found a couple of sticks of margarine and a block of cream cheese.  We thought...hmmmm.  what could we create from those ingredients.

We then decided upon buttery cream cheese cookies.  However, our dough, for some reason ended up more like batter.  

Since we now had a mixing bowl of cake batter, we decides to create a buttery low-carb cream cheese pound cake.

Our newly discovered pound cake was super buttery, exceptionally moist, and completely full of flavor!

Our preparation time is a mere 10 minutes, while cooking time is another 1 hour.

Our ingredients include:

  • 3 Eggs
  • 3 Sticks of Margarine
  • 3 tsp. Vanilla
  • 2 Cups Sweetener
  • 1 1/2 Cups Carbquik
  • 1 1/2 tsp. Baking Powder
  • 1 8 oz. Block Cream Cheese
  • 3/4th tsp. Salt
We'll begin by placing our cream cheese and butter in our mixing bowl and will melt in our microwave for 1 minute 30 seconds.

This will melt our ingredients, so that they are easier to mix together.




Next, we'll break up our cream cheese and will whisk our ingredients together.




We'll then, add our eggs and will continue to whisk with our cream cheese mixture.




Next, we'll add our sweetener, salt, baking powder, vanilla, and will stir, until our mixture is fully blended.









We'll then, add our Carbquik, will once again stir, and will place aside.




We'll now, preheat our oven to 325°F and will spray our pan with cooking spray.




Next, we'll pour our batter into our pan, will place in our oven, and will bake for approximately 1 hour.

When baking cakes in our oven, we'll usually place our pan on a larger cooking sheet/pan, so that our cake cooks evenly.




After an hour has passed, we'll remove our cake from our oven and will perform our toothpick test.  

We'll insert our toothpick into the middle of our cake.  If, when removed, our toothpick is clean of any cake particles, then our cake has finished baking.

If any particles are present, simply continue to bake at intervals of 7 minutes, or until your toothpick is clean, when removed.


Oh my gosh!!!  Our cake is SUPER moist and buttery! 

We're so happy that our cookie dough ended up as a batter.  Otherwise, we would have never discovered such a delicious pound cake!

Usually, our cakes will last us for close to a week.  However, this cake lasted only 2 days.  ðŸ˜€ðŸ˜‚
