Smokey's Low-Carb Spinach Dip Stuffed Mushrooms

Here's a great holiday recipe to share with your guests, when they drop by for the holidays.  This easy-to-make appetizer can also be sampled while having cocktails or simply by themselves. Preparation time is a mere 5 minutes and cooking takes only 15 minutes.

Here's our ingredients for our rich and tasty stuffed mushrooms:

  • 1 Large container of Fresh Mushrooms
  • 1 16 oz. or small container of Spinach Dip (We LOVE Safeway's or Albertson's Spinach Dip the best)
  • 1/2 cup of Parmesan Cheese
  • 2 tsp. Hot Sauce
  • 1 Small 8 oz. bag of shredded cheese of choice
We like to doctor our Spinach Dip a tad bit. We'll start by placing our spinach dip in a large mixing bowl.

Next, we'll add our Parmesan Cheese and hot sauce and will mix until fully blended.

We'll then set out mixture aside and will clean our mushrooms.

We want our mushrooms to be free of dirt or other grime, before cooking. Therefore, we'll place the mushrooms on a large sized paper towel and will gently rub each one, until clean.

Next, we'll snap each mushroom stem and will discard.

We'll then line our large baking pan with aluminum foil and will spray with cooking spray.  We will also preheat our oven to 400F degrees.

Next, line the mushrooms on the baking pan, spacing them slightly apart from each other.

We'll then spoon about 1/2 to 1 tsp of the mixture into the top of each mushroom, until all are filled.

Next, we'll sprinkle a pinch of the shredded cheese over each mushroom and place in the oven for about 15 minutes.

We'll remove our mushrooms from the oven when they have slightly browned.

If you enjoy our appetizers piping hot, then they are ready to be served!!  Otherwise, they may be cooled for 3-5 minutes.

Either way, enjoy!  Bon Appetit!
