Giraffe's Old Fashioned Low-Carb Blueberry Cobbler


We're on a dessert kick again this week and have been craving pie-like dishes.  When we were kids, our mothers cooked many dishes and fabulous desserts with Bisquick, which of course had tons of carbs, but was delicious.  We miss using Bisquick for our pancakes, muffins, etc.

However, we found a product that tastes unbelievably similar to Bisquick - Carbquik, and only has 2 net grams of carbs per serving.  

We haven't been able to find Carbquik at our local grocery stores. However, we did find it on Amazon.com at $14 for a large 3 pound box.  And with our Prime Membership, the shipping was free.  

I feel like a kid in a candy shop!  Carbquik gives us endless ideas for scrumptious dishes.

This week's tantalizing treat is an Old Fashioned Low-Carb Blueberry Cobbler! We only had to wait 30 minutes for our pie-like dish to reach our mouths. (Thank goodness 😋 ~ because the smells from oven were divine)

At only 7 grams of carbs for the entire "pie," our recipe required only 5 minutes of preparation time and 25 minutes of baking.  

Our ingredients include:


  • 1 Cup Carbquik
  • 1 Cup Sweetener
  • 1 Container of Fresh Blueberries
  • 1 Egg
  • 1 Stick of Margarine
  • 1 Tbsp. Lemon Juice
  • 1/4th tsp. Tapioca
We'll begin by spraying our pie dish with cooking spray and preheating our oven to 350F degrees.



Next, we'll empty our blueberries into our pie dish.


We'll then, pour our lemon juice and Tapioca over our blueberries.  The Tapioca will assist in thickening our blueberries, as they cook.

Over the Holiday Seasons, we'll bake our pies with Tapioca, to help thicken the pie filling. The Tapioca works like a charm.





We'll place our blueberries aside and will prepare our crumble.

We'll now, place our Carbquik, sweetener, and egg into our mixing bowl.





Next, we'll stir our ingredients together with a fork, until our mixture is fully blended.



We'll then, pour our dry Carbquik mixture over our blueberries.



Next, we'll melt our Margarine in our microwave for about 1 minute, will pour over our Carbquik mixture, and will bake in our oven for 25 minutes or until the top is slightly browned.





We'll then, remove our cobbler from our oven after the time allotted and will allow to cool for 15 minutes.


Voila!!

Our amazingly scrumptious blueberry cobbler is ready to be served. 

The blueberries taste like blueberry pie from the holiday seasons and the crumble is lightly sweet and tasty!  

We could not believe how our old fashioned cobbler tasted like something from Grandma's kitchen.
