Giraffe's Sassy Low-Carb Swiss Steak

We're always searching for low-carb hearty dinner entrees that will not only be satisfying, but also unique and scrumptious.

When we were growing up, we'd return home from school and would smell the aroma of Mom's Swiss Steak cooking in her kitchen.  So, we thought we would try to duplicate her masterpiece.

Our Swiss Steak is very tomatoey, oniony, with an added Italian Flare.

Preparation time is only about 10 minutes, while our cooking time is another 45 minutes to an hour, depending on our meat's tenderness.

This week's ingredients are:

  • 2-3 Sirloin Steaks
  • 3 Roma Tomatoes
  • 1 Package of Bacon
  • 1 small can of Mushrooms (4 oz.)
  • 1 Tbsp. + 1 tsp. Oregano or Italian Seasoning
  • 1 Tbsp. Sweetener
  • 1 tsp. Worcestershire Sauce
  • 1/2 tsp. Minced Garlic
  • 1/2 tsp. Ground Pepper
  • 1/2 Sliced Onion

We'll begin by topping our tomatoes and then slicing them into fourths.

We'll then, place our tomatoes into our mixing bowl and will smash with our mashing tool, until they resemble Stewed Tomatoes.

Next, we'll pour 1 Tbsp. of Oregano and Sweetener over our tomatoes and will stir until they are completely seasoned.

We'll then, place our tomatoes in our pot, will cover, and will boil on medium heat for about 15-20 minutes or until they have boiled down to a thickened sauce.

While our tomatoes are resting, we'll slice our bacon and place them in our frying pan.

We'll then, cover and fry our bacon
on medium heat, until our meat is crisp and crumbly.

We'll, next, place our bacon on a paper towel lined plate to absorb any excess oil and will then place aside.

We'll then, drain all but 1/8th of a cup of our bacon grease.

We'll keep our grease in our skillet to flavor our Sirloin Steaks, as they are cooking.

Cooking our Steaks in our bacon grease will add a little smokey flavor and richness to our meat.

While most of our ingredients are resting, we'll slice our onion into rings.

Now, we'll add our steaks back into our bacon grease and will cook on medium heat for 5 minutes on both sides, to lock in the bacon flavor.

We'll then add our Minced Garlic, chopped onion, mushrooms, and will cook for about 5 minutes, or until our onions are have slightly softened.

We'll then, add our boiled tomatoes, Ground Pepper, bacon, and will stir, until our mixture has been blended.

Next, we'll add our remaining 1 tsp. of Oregano, will stir, cover and cook, until most of our water has evaporated and our mixture has thickened.

Once our dish has significantly thickened, we'll add one more bit of flavor - our Worcestershire Sauce.

We'll then, stir our mixture and will cook for about 5-10 more minutes, until our steak has become pleasantly tender.

Oh my goodness!!

We absolutely love our fresh tomato, onion, and Italian Flavors, coupled with our tender slices of steak.

Definitely reminds us of Mom's tender Swiss Steak, from back in the day.

... Tasty Memories... ((sigh))

We hope you enjoy our hearty and delicious rendition of the past.

From our kitchen to yours ~

Enjoy! 😋
