Smokey's Low-Carb On-the-Go Egg Sandwich




A low-carb egg muffin sandwich?? Who knew that a mock Egg McMuffin sandwich could be prepared at home, but without the carbs?  After baking our Low-Carb Eggceptional Bread last week, we wondered if we could create a low-carb mock Egg McMuffin.  

Believe it or not, it was actually simple, didn't take much time to prepare and (for us) tasted identical to the Golden Arches breakfast staple.  Our recipe is super tasty with or without the bread. 

Besides baking the bread, (50 minutes total), our preparation time was a mere 5 minutes and cooking time was 12-15 minutes.  

Only a few items were needed for our recipe:


  • 12 Eggs
  • 1 Package of Canadian Bacon
  • 1 Package of Sliced Cheese
  • Ground Pepper
  • 12 Tbsp. Water
We'll begin by poaching our eggs in a 12 cup muffin pan.  

We've attempted to poach eggs in boiling water, in the past, and found the procedure to be a bit difficult. So, we found this easier method of using a muffin pan.  

First, we'll spray our muffin pan with cooking spray and will preheat our oven to 350F degrees.  



Next, we'll pour 1 Tbsp. of water into each of the muffin cups.




We'll then, crack each egg into each of the muffin cups, until all 12 cups have been filled.





Next, sprinkle a pinch of ground pepper over each egg and place the muffin pan into the oven, baking for 10-12 minutes.



While our eggs are baking, we'll warm our ready-to-eat Canadian Bacon.  We place them on a microwave safe plate, cook them for 3 minutes, and will place them aside.



We enjoy soft yolks in the middle of our eggs.  We, therefore, like to remove our eggs from the oven when they appear almost fully cooked.  When removing, you'll notice that the eggs are slightly watery, as shown in the picture. 

For those who enjoy their yolks to be cooked well done, simply remove the pan when the water has completely evaporated.


Finally, we'll begin to create our egg sandwiches.  Place a piece of bread on the center of your plate and top with the Canadian Bacon.  



Next, scoop an egg out of the muffin pan and onto the Canadian Bacon.



We'll then place a slice of cheese on top of the egg and will place in the microwave for about 20 seconds (just enough time to melt the cheese and to avoid further cooking of the egg yolk)




There you have it!!!  A look alike Low-Carb On-the-Go Egg Sandwich. 


We found ourselves eating this delicious breakfast sandwich at all times throughout the day. This has become our latest favorite meal.  

Low-Carbs aren't just for breakfast anymore!
