Smokey's Cinnamony, Soft, and Crumbly Low-Carb Chocolate Chip Mandel Bread


Meeting my husband's mom was such an awesome experience, on so many levels.  Her cooking and baking is just phenomenal, as she is always baking "from the heart." 

One of her many desserts that I fell in love with was her Mandel Bread. I had never tried or even heard of Mandel Bread. I was then, introduced to this soft biscotti-like cookie, made with Chocolate Chips, rolled in cinnamon and sugar.

My husband always mentions that the aroma of Mandel Bread in the oven, brings back his memories of childhood snow days.

Of course, there are probably hundreds of carbs per bite. So, we decided to see if we could make a low-carb version of this delightful dessert on our own.

Our soft biscotti is sweet and crumbly and definitely offers a plethora of flavor!

Preparation time is a mere 5-10 minutes, while baking time is only another 25 minutes.

Our Mandel Bread ingredients include:



We'll first, crack our eggs and will place them in our mixing bowl.


Next, we'll beat them until they are well blended.



We'll then, add 1 1/4th cups of our sweetener and will stir.



Next, we'll add our baking powder, vanilla, Lemon Juice, and will stir until well mixed.










We'll then, add our package of sugar-free Chocolate Chips, and will stir.



Finally, we'll add our Almond Flour and Carbquik and will mix until we have formed a ball of dough.





Now, we're ready to bake our Mandel Bread Dough.

We'll first, preheat our oven to 350 F degrees and will spray our lined baking pan with cooking spray.



Next, we'll pour our dough into our pan and will evenly spread our batter to all sides of our baking dish.




We'll then, place our Mandel Bread in our oven to bake for 25 minutes.

Once our Mandel Bread has slightly browned on top and around its edges, we'll remove from our oven to cool.


After cooling for about 20 minutes, we'll begin to slice our Mandel Bread into 2-3 inch pieces.





Next, we'll pour the remaining 1 cup of our sweetener, along with our cinnamon into our storage bag.





We'll then, firmly close our bag and will shake until both ingredients have been well blended.


Next, we'll place half of our Mandel Bread Pieces into our storage bag, will close, and will shake, until each piece has been coated.

We'll continue until our remaining Mandel Bread Pieces have been coated.





Voila!!

Our Cinnamony, Soft, and Crumbly Mandel Bread is ready to be savored.  


We especially enjoy how each piece crumbles and melts in our mouths.  The cinnamon and sweetener coating also enhances the chocolate chip flavor of our biscotti-like cookie.


Our Mandel Bread lasted us for a couple of nights worth of desserts.

Although, we could have devoured them all in one setting.  😆😄😃😂
