Smokey's Low-Carb Peanut Butter Frosted Fudgey Brownies


Chocolate and peanut butter triumphs again!  Thanks to Carbquik, we are able to satisfy our tantalizing cravings with another tasty treat.

Brownies have always been a household favorite....creamy, fluffy, chocolatey, yet rich and tasty! Having the ability to create low-carb brownies, without losing its flavor is an added benefit.

As if our fudgey brownies aren't enough to stimulate our taste buds, add a topping of creamy peanut butter to send them jumping for joy!

Our preparation time is only 5 minutes, while baking consists of another 25 minutes.

We shopped for this weeks ingredients, which includes:

  • 2 Sticks Margarine
  • 2 Eggs + 1 Egg Yolk
  • 1 1/2 Cup Carbquik
  • 1 tsp. Vanilla
  • Heaping 1/2 Cup + 2 Tbsp. Sweetener
  • 1/2 Cup Unsweetened Baking Cocoa
  • 1/2 Cup Peanut Butter

We'll begin by placing our margarine in our mixing bowl and will melt in our microwave for 1 minute.




Next, we'll add our heaping 1/2 cup of sweetener and cocoa and will stir until well mixed.





We'll then, add our 2 eggs, our 1 egg yolk, vanilla, and will beat until fully blended.










Next, we'll add our Carbquik and will again stir, until well blended.



Now, it's time to spray our 8 inch by 8 inch (or 9 inch by 9 inch) pan with cooking spray and to preheat our oven to 325F degrees.



We'll then, pour our batter into our baking pan and will place in our oven for 24 minutes, or until our brownies gradually pull away from the side of our pan.

Our brownies might seem as if they are too moist, when we initially remove them from the oven. However, they will slightly harden, as we place them in the refrigerator.





While we are awaiting our brownies to cook, we'll create our very simple peanut butter frosting.

We'll place our Peanut Butter into our small bowl and will melt in the microwave for 1 minute.




We'll now remove our brownies from the oven and will allow to cool for about 5-10 minutes.


Next, we'll pour and evenly spread our Peanut Butter over our brownies and will place in our refrigerator for about 20 minutes to cool.





We'll then, remove our brownies from our refrigerator, will sprinkle 2 Tbsp. of Sweetener over our brownies, and will slice and serve.


Our Peanut Butter frosted Fudgey Brownies are delightfully delicious!!

They are soft, chocolatey, rich, and light!  As I take a bite of our luscious brownies, I can taste its richness.  The peanut butter mixes so well with our brownie flavors.

I feel as if I could gain 20 pounds from our dessert, until I realize ~ WOW!!! ~ this is low-carb! 

Absolutely delicious...  😋
