Giraffe's Sweet and Sassy Low-Carb Cinnamon Rolls


One of the many pleasures of walking into any pastry shop or bakery is the wonderful aroma of hot cinnamon buns dancing around our heads.

The aroma of the warm buns and sweet icing is one of our favorites!  

We remember walking into Cinnabon, years ago, ordering a half-dozen Cinnamon Rolls with their special icing, and devouring them all in one setting.  Well, the aftermath was not pretty and neither was the weight gain. 😂

We have an absolutely delicious recipe for low-carb Cinnamon Rolls and low-carb icing, that won't put on the pounds, but will still taste yummy!

Preparation time is about 20 minutes, while baking time another 20 minutes.

Our ingredients for our Cinnamon Rolls include:


  • 3 1/2 tsp. + 2 Tbsp. + 1/2 Cup Sweetener
  • 3 Eggs
  • 2 tsp. Cinnamon
  • 1 1/2 tsp. Cream Cheese
  • 1 Cup Carbquik
  • 1 Stick + 1 tsp. Butter or Margarine
  • 1 Individual size of Yogurt (We used Strawberry Cheesecake Flavor)
  • 1/2 tsp. + 1/2 tsp. Vanilla
  • 1/2 tsp. Baking Powder
  • 1/2 tsp. Baking Soda
  • 1/4 tsp. Salt
We'll begin by placing 3 1/2 tsp. of Sweetener and our Cinnamon into a bowl and will stir until fully mixed, setting aside for a little later.







Next, we'll melt our stick of Margarine, in our microwave, for 1 minute.




We'll then, add 1/2 cup of our Sweetener and eggs, and will beat until fully blended.







Now, we'll add our Vanilla and will once again, beat until fully blended.




We'll then, add our yogurt and will stir, until well mixed.




Next, we'll add our Carbquik, salt, Baking Soda, and Baking Powder, and will mix, until fully blended.









We'll now, preheat our oven to 325F degrees and will spray our muffin tins with cooking spray.



Next, we'll pour our batter into each of our muffin cups.  

However, we will only fill our cups half of the way up.


We'll then, sprinkle about 1 tsp. of our Sweetener & Cinnamon mixture over our batter, in each of our muffin cups. 



Next, we'll pour our remaining batter over each muffin cup.


Well, now, place our muffin tin into our oven and will bake for 20 minutes, or until fully done.


While our Cinnamon Rolls are baking, we'll make our icing.

We'll begin, by placing our cream cheese and 2 tsp. of Margarine in our mixing bowl and will melt in our microwave for 30 seconds.





We'll, then, remove our mixture from our microwave and will stir until well blended.


Next, we'll add our Vanilla and Sweetener, and will again stir, until well blended.





After our 20 minutes have passed, we'll remove our Cinnamon Rolls from our oven and will check its doneness with our toothpick.

If we remove our toothpick and our toothpick is clean of any particles, our rolls have fully baked.

If any particles are present, merely, continue baking in 5 minute intervals and recheck for its doneness with your toothpick.

And we are in luck!  

Our Cinnamon Rolls have finished baking!


Now, we'll prepare our icing for our Cinnamon Rolls.

A Piping bag is very easy to create. There's no need to buy expensive ones.

We'll merely, take a small quart-sized Ziploc bag and will insert our icing.


We'll then, snip the corner of our Ziploc bag, with just enough room to drizzle our icing onto our Cinnamon Rolls.


Next, we'll place our Cinnamon Rolls onto our plate to cool for about 5-10 minutes.


Finally, we'll drizzle our icing onto each of our Cinnamon Rolls.



Voila!!

Our scrumptious, soft, and gooey Cinnamon Rolls are finally ready for us to savor.  

Each bite, full of Cinnamon and Cream Cheese, explodes in our mouths, creating another tasty experience.


We love having another yummy low-carb alternative to the typical carb-full Cinnamon Roll.
