Smokey's Low-Carb Bacon Cheeseburger Quiche-erol

We discovered this amazingly cheesy and delicious dish a few months ago - kind of a mix between a quiche and a casserole.  We loved it so much, that we have been making it over and over again, every couple of weeks.

Our quiche-erol tastes very similar to a bacon double cheeseburger, with all of the condiments added. The eggs and cheese also makes the dish creamy and cheesy, which adds to the fun.

Not only is our casserole low carb, but, also very hearty and delicious! We've also found this dish to last for 2 dinners, which is also very economical.

Preparation time was about 5-10 minutes and cooking time, an additional 1 hour.

Our ingredients include:

  • 12 Eggs
  • 6 Tbsp. Reduced Sugar Ketchup
  • 3 Tbsp. Mustard
  • 3 Tbsp. Worcestershire Sauce
  • 3 tsp. Hot Sauce
  • 3 Cloves Garlic
  • 3 lb. Ground Beef
  • 1 Package of Bacon
  • 1 8oz. Can of Mushrooms
  • 1 Onion
  • 1 Cup of Plain Greek Yogurt
  • 1 tsp. Ground Pepper
  • 1 tsp. Dill
  • 1 Large Bag of Shredded Cheese of Choice
  • 3/4th Cup of Heavy Whipping Cream
We'll begin by slicing our bacon into smaller pieces.

Next, we'll place our frying pan on our stove and will heat on medium heat.

We'll then, add our bacon to our skillet, will cover, and cook for about 10 minutes, or until our meat is somewhat crisp.

We'll make certain to stir our bacon, every so often, to avoid our meat from burning and sticking to our pan.

Next, we'll drain our grease, will pour our bacon in to a bowl, and will place aside for now.

We'll then, add our ground beef to our skillet, will cover, and cook for another 15 minutes, or until our meat is fully cooked.

Again, we'll make certain to stir our beef, every so often, to avoid our meat from burning and sticking to our pan.

While our ground beef is cooking, we'll peel and chop our onion using our amazing 1-Second Slicer, that we bought on Amazon.

We'll then, drain our grease, and will return our ground beef to our stove.

Next, we'll add our chopped onion and garlic to our beef mixture, will stir, cover, and cook for about 5 minutes, or until our onions appear to be translucent.

We'll then, add our yogurt, mustard, ketchup, and Worcestershire Sauce to our ground beef mixture and will stir.

'

Next, we'll spray our baking dish with cooking spray and will preheat our oven to 350°F.

We'll then, spread our beef mixture evenly into all sides of our dish.

Next, we'll place our bacon over our ground beef mixture.

While our dish is resting, we'll place our eggs in our mixing bowl and will beat until completely whipped.

Next, we'll add our heavy whipping cream, hot sauce, pepper, and will stir.

We'll then, evenly pour our egg mixture over our ground beef mixture.'

Next, we'll evenly spread our mushrooms on top of our new mixture.

Finally, we'll top our dish with a generous amount of shredded cheese. As you can tell from our previous posts, we LOVE our cheese.  😂😂😂

We'll then, place our dish in our oven and will bake for 30 minutes, or until our cheese has browned and our quiche-erole doesn't jiggle.

Voila!!!

Our dish has finished baking!

We'll allow our dish to rest for about 10 minutes or so. This will help our quiche-erole to set, which will enable us to slice our mixture a little easier.

As we're cutting into our quiche-erole, we are drooling, anticipating our yummy and gooey meal that we're about to enjoy for dinner.

Before devouring our dish, however, we're going to finely chop a sprig of dill and will sprinkle over our slice of joy.

Each bite tastes like a bacon cheeseburger with mustard and cheese. Our mixture is creamy and cheesy and just makes our mouths water.

We hope you enjoy our low-carb dish, as much as we do.

From our kitchen to yours ~

Bon Apetit!
