Giraffe's Low-Carb Eggceptional Bread


Who doesn't love bread??  ((Sigh))  The buttery rich flavor...the aroma of the bread baking in the oven....Yum! That being said, bread was one of the most difficult foods to eliminate from our diets.

However, our Eggceptional Bread will bring fluffy and tastiness back into your palettes, without the unwanted carbs.  Preparation time is a mere 10 minutes, while the actually cooking time is about 40 minutes. 

The few ingredients include:


  • 6 Eggs
  • 8 oz. Block of Cream Cheese 
  • Pinch of Salt

We'll begin by softening our cream cheese by placing the block into our microwave oven for a little over a minute. 



 Next, we'll separate our egg whites from our yolks. 

 Hold each half of the egg in each hand.  Gently transfer the egg yolk back and forth into the empty half of the egg shell, allowing the egg whites to stream into the mixing bowl.  Continue transferring until most of the egg whites have fallen into the bowl and then place the remaining yolk in the 2nd mixing bowl, with the cream cheese.  





Continue with the remaining eggs, until finished.




We'll then beat the yolks and cream cheese with an electric mixer on medium speed for about 1 minute, or until well blended.





Now, it's time to beat our egg whites and to create very stiff peaks.  Creating stiff peaks allows us to beat more air into our egg whites. The extra air is necessary to keep our bread light and fluffy. 

After adding our pinch of salt to our egg whites, we'll beat with our electric mixer on medium speed for 5 minutes, until our egg whites form very stiff peaks.






We'll then fold our egg white mixture into our egg yolk mixture.  Folding one set of ingredients into another allows us to keep the air bubbles intact, which will therefore, keep our "batter" fluffy.  

Simply pour the egg whites over the yolk mixture.  






We'll take our spoon and will scoop our egg yolk mixture, which is on the bottom of our bowl, onto the top of our egg whites.  We'll then rotate the bowl, and will continue scooping until the mixture has been completed folded together.  




Next, we'll line about 3 pans with aluminum foil, will spray with cooking spray, and will preheat the oven to 325F degrees.




We'll then quickly spoon our "batter" onto our baking pans in 2-3 inch diameters, before they begin to deflate, will place in the oven, and will bake for 25 minutes or until golden brown.




Next, we'll remove from the oven, flip each piece of bread, and will bake for an additional 10 minutes.





We'll again remove our bread from the oven and will allow to cool for at least 15-20 minutes. 




You'll be completely amazed at how bread-like these smell and taste. 

Our Eggceptional Bread is great for Eggs Benedict, any variety of sandwiches, or just by themselves with butter and jam.
