Giraffe's Creamy Low-Carb Broccoli Casserole


I thorougly enjoyed Mom's creamy broccoli casserole dish made with Cream of Mushroom Soup and mayonnaise, when I was a child.  

I searched for a Low-Carb alternative and discovered a version made with our favorite "flour-" Carbquik (click Carbquik to purchase through Amazon).

Our creamy casserole sooo reminded us Mom's hot dish of the past.

Preparation time was a mere 5-10 minutes, while actual cooking time was another 45-40 minutes.

Our ingredients include:


  • 6 Tbsp. Cream Cheese
  • 1 Package of Frozen Broccoli Flourets 
  • 2 Cups of Shredded Cheese of Choice
  • 2 Tbsp. Carbquik
  • 1 Cup Heavy Whipping Cream
  • 1/2 tsp. Minced Garlic
  • 1/2 Stick of Margarine 
  • 1/8 tsp. Ground Pepper
We'll begin by melting our butter in our pot, will add our garlic and will stir, until fully melted.






Next, we'll add our Carbquik, will stir and cook for about 1 minute or until fully blended. 




We'll then, add our Heavy Whipping Cream and will once again stir until well mixed.



We'll next, add our ground pepper and again will stir.








Finally, we'll add our Cream Cheese and will continue stirring, until the cheese has melted and has blended with our milk mixture.

We allowed our frozen broccoli to thaw in our sink, before placing in our casserole dish.

Once our broccoli had thawed, we opened our package, drained any excess water and placed in our baking dish.

We then, poured our creamy cheese mixture over our broccoli and stirred until well blended.




Next, we added our shredded cheese to the top of our casserole.


We, then, covered our baking dish, placed in our oven, and baked for 40 minutes on 350F degrees.


After our dish has baked for the allowed time, we removed our casserole and stirred.  



Voila!

Our hot, creamy, and yummy broccoli casserole is ready to be served. 

Oh my....the aroma alone is permeating our kitchen, just like Mom's casserole would.

Our cheesy mixture actually tastes like Southern White Biscuit Gravy.  

And to combine that with the fresh tasting broccoli.... 

Mmmmmmmmmm!

Our dish is absolutely yummy!!
