Giraffe's Baconic Low-Carb Carbonara Sauce


Last week's Soft and Tasty Low-Carb Fettuccine Noodles
 recipe were absolutely incredible! 

We've always enjoyed our pasta sauces and therefore, decided to enjoy a pasta Carbonara for this week.  

Carbonara has always been one of our favorites, when we dine out.  The richness of the sauce, the creaminess, and of course the bacon pieces all make our mouths water.  Mmmmmmm.

Our sauce was creamy, tasty, and full of good hearted flavor.  

We felt as if we were dining in a local Italian restaurant. 

Preparation time was only 5-10 minutes, while our cooking time is only another 12 minutes.

Our ingredients include:


  • 4 Eggs
  • 2 Cups Heavy Whipping Cream
  • 2 tsp. Minced Garlic
  • 1 Package of Bacon
  • 1 Cup Parmesan Cheese
  • 1/4th tsp. Ground Pepper
  • A pinch of Italian Seasoning or Parsley 
We'll begin by placing our bacon on medium heat, covering, and frying for about 5 minutes or until semi crisp.







After our bacon has finished frying, we'll place our bacon on a paper towel lined plate, to soak up the grease, and will place aside.




Next, we'll pour about 4 Tbsp. of our bacon grease into a little bowl and will place aside.


We'll then, discard the remaining grease and will return our 4 Tbsp. of bacon oil to our pan.


Next, we'll place our garlic in our grease and will cook on medium heat for about 1 minute.

We'll constantly stir our garlic to avoid any burning.



Next, we'll add our cream, Parmesan Cheese, and pepper, and will stir, until fully mixed.

We'll then, cook for about 1 minute, or until our mixture has slightly thickened. 

We'll also continue stirring, to avoid our cream from burning and sticking to the bottom of our pan.







Next, we'll lower our heat to a simmer.


While our cream mixture is simmering, we'll will place our eggs into our bowl, will whisk until fully beaten, and will place aside.




Next, we'll chop our bacon into bite size pieces and will also place aside.



We'll now, whisk our eggs into our cream mixture and will stir for about 3 minutes or until our sauce has slightly thickened.






Next, we'll remove our sauce from our heat, will add our bacon, and will stir.







Voila!!  

Our Carbonara Sauce is ready to be devoured. 

We'll then, pour our creamy and cheesy sauce over our low-carb noodles.

And to give our pasta a touch of color, we'll sprinkle just a bit of Italian Seasoning over the top.



Our mouths have been watering for the past couple of minutes, as the aroma has been permeating our apartment!


We can't believe how authentic our Carbonara Pasta tastes and never realized how easy such a gourmet dish would be to create.

Giraffe's Succulent Italian Low-Carb Tuscan Chicken and Mushrooms


Mamma Mia!!  Italian Music is playing in the background, streaming from Google's Alexa, we are wearing our traditional Italian clothing, and we are creating Giraffe's Succulent Low-Carb Italian Tuscan Chicken and Mushrooms.

Well, maybe we're just creating Giraffe's Succulent Italian Low-Carb Tuscan Chicken and Mushrooms. 😆

We've been salivating all day, over the anticipation of ravishing our tender chicken thighs, cooked in wine, coupled with our sauteed mushrooms. 

Since we're using a dry cooking wine, our dish 's carb count is little to none.   

Preparation time was very minimal at about 10 minutes.  Our cooking time, however, was another 55 minutes to 1 hour.

This week's ingredients include:

  • 2 1/2 Tbsp. Margarine
  • 2 Tbsp Olive Oil
  • 2 tsp. Minced Garlic
  • 1 Family Size Package of Boneless Skinless Chicken thighs (or chicken part of choice)
  • 1 Package of Sliced Mushrooms
  • 1 Chopped Onion
  • 1 Tbsp. Carbquik (which we purchased from Amazon)
  • 2/3 Cups of Chicken Broth
  • 2/3 Cups of Dry White Cooking Wine
  • 1/2 + 3/4th tsp. Ground Pepper
We'll begin by heating our oil on medium heat.





Once our oil begins to slightly smoke, this is our indication that our oil has heated sufficiently.  

We'll then, add our chicken thighs to our pan.


Next, we'll evenly sprinkle 1/2 tsp. of our Ground Pepper over our chicken, will cover, and cook for 10 minutes.





As we're awaiting our chicken to cook, we'll chop our onion using our 1-Second Slicer, and we'll place aside.







After our 10 minutes have passed, we'll flip our chicken, cover, and will continue cooking for another 10 minutes.






We'll repeat our last step and will, again, flip our chicken after our 10 minutes have passed, cover, and will continue cooking for a remaining 10 minutes.





We'll now, remove our chicken thighs from our pan and will place them aside.  





We're going to cook our onions, garlic, parsley, and mushrooms in our chicken grease, which will offer our vegetables added flavor.  


We'll, then cook our onions, garlic, and parsley for about 5 minutes, or until our onions appear translucent. 








Next, we'll add our mushrooms and will cook for about 5 minutes, or until they have slightly browned and softened. 




We'll then, add our Carbquik to our mixture, and will stir and cook for another 1 minute.

This will allow our mixture to slightly thicken.





Next, we'll add our chicken broth, wine, will bring to a boil, and will constantly stir for 3 minutes, or until our liquid has thickened.

We will continually stir our mixture, to avoid our contents from sticking to the bottom of our pan.

As our content boils, its alcohol content will dissipate, leaving the wine's flavor remaining.






We'll now, remove our chicken from our heat and will add our margarine, remaining 1/4th tsp. of our Ground Pepper, and will stir.






We'll then, return our chicken to our pan, will stir, and will place our mixture back on our burner.



Next, we'll cook our chicken mixture on medium heat for another 10 minutes, or until our liquid has slightly evaporated, and has, therefore, thickened.



Voila!  

Our Italian Chicken Dish is ready to be savored.  

Our sauteed mushrooms are soft, plump, and full of tasty garlic and onion flavor.  

We thoroughly love the subtle wine flavor that is also coupled with our chicken and that is slightly tasted throughout our dish.

Our chicken is so scrumptiously tender, that each piece is falling apart.


Each bite offers a super moist piece of chicken, wine and garlic sauteed mushrooms and a world of good 'ole Italian flavor.
