Smokey's Low-Carb Cheesy & Chewy Breadsticks


One of the carb-full dishes we often miss are those warm, soft, and cheesy breadsticks, especially from Pizza Hut or Olive Garden.  Just thinking about those awesomely delicious breadsticks make our mouths water.

Who knew that low-carb breadsticks could taste identical to the ones mentioned above?

Our low-carb cheesy breadsticks are very simple to make and take hardly any time at all.  

Our preparation time was only 3-5 minutes, while baking time was another 25 minutes.

Our ingredients include:

  • 2 Cups of Shredded Cheese
  • 2 Eggs
  • 2 Tbsp. Parmesan Cheese
  • 1 tsp. Parsley
  • 1/2 tsp. Oregano or Italian Seasoning
We'll begin by placing our eggs in our mixing bowl and will fully beat them.




Next, we'll add our shredded cheese, Oregano, and will stir until fully blended.





Believe it or not...we're half of the way done with our recipe.

We'll then, preheat our oven to 350F degrees and will spray our tiny pan with cooking spray.



We like to use Parchment Paper to ensure our breadsticks will not stick to our pan.  

So, we'll place our Parchment Paper into our pan and will again, spray with cooking spray.



Now, we'll add our "dough" to our pan and will evenly spread our mixture to all four corners.



We'll then, place our "dough" into the oven and will bake for 20 minutes.


Next, we'll remove our breadsticks from our oven, will evenly sprinkle our Parmesan Cheese and parsley over our "dough", and will again place in our oven for another 5 minutes.






Finally, we'll remove our breadsticks from our oven.


We'll then, gently lift our Parchment Paper, will slide our spatula under our breadsticks, and will slowly remove them from the pan, placing them on our plate.





Now, we'll slice our bread into actual breadsticks.






We enjoy our breadsticks either by themselves, with marinara sauce, or with ranch salad dressing.

Tonight, we chose our Lighthouse Ranch Dressing. 

Mmmmmmmmmmm!  These warm and cheesy breadsticks are amazing.  They taste EXACTLY like authentic breadsticks. 

They are warm, cheesy and crispy underneath - Just the way we like them.



They appear, smell, and taste just like our missed breadsticks from our favorite restaurants.

Giraffe's Low-Carb Parmesan Mushroom Chicken


This week we thought we would stray from our string of low-carb dessert making and concentrate more on a succulent chicken dish.

Our hearty low-carb Parmesan mushroom chicken sounded like a cure for our cool night, here in Dallas.

Preparation time for our chicken recipe was 10-15 minutes, while our cooking time was about 1 hr. to 1 hr. 15 minutes.

Our succulent ingredients include:


  • 3-4 Medium Sized Chicken Breast
  • 3 Cloves Garlic
  • 1 Package of Freshly Sliced Mushrooms
  • 1 Stick of Margarine
  • 1 Tbsp. Italian Seasoning
  • 1 Cup Mayonnaise
  • 1 Cup Parmesan Cheese
  • 1/2 Chopped Onion
  • 1/2 tsp. Ground Pepper
We'll start by melting our margarine in our frying pan on medium heat.



Next, we'll peel and top our garlic cloves.





We'll then smash our cloves with our knife to bring out the garlic juices and will mince them. 




Next, we'll place our chopped onions, minced Garlic, and mushrooms into our melted margarine, will stir and cover. 

We will then, saute our vegetables for 10-15 minutes or until our onions are slightly translucent and our mushrooms have reduced in size.






While our vegetables are sauteing, we'll place our Mayo and Parmesan Cheese in their respective bowls.



After our vegetables have sauteed, we'll dredge our chicken breasts through our Mayo and Parmesan Cheese and will place in our skillet, one by one.

Had we realized that our chicken breasts were sooo large, we would have sliced them into pieces before placing them in our skillet.  

However, we'll do that a little later into our cooking process.  







We'll then, sprinkle our Italian Seasoning and Pepper over our chicken and will cover to allow them to cool for about 20 minutes.





Next, we'll uncover our pan and will flip each breast and will continue cooking for another 15-20 minutes. 



Since our chicken breasts are so huge, their middles are still pink.  

We don't want to over cook our chicken. So, we'll slice them into smaller strips to allow for a faster cooking time.



We'll then, continue to cook our chicken, periodically, basting our breasts with their juices. 

We'll cook them for another 10 minutes, or until our meat is absent of any pinkness. 


Since our chicken' s coloring is a perfect white and gravy is still present, our breasts have fully cooked!


The aroma has been permeating our apartment for the past hour and has been teasing our taste buds. 

Finally, a taste of our tender garlicky mushroom chicken is overwhelmingly delicious!!

A warm, hearty, and succulent chicken dish is just what the doctor ordered.  

This recipe is one that we've been cooking for years and will continue to cook for many many more.
