Smokey's Soft and Cheesy Low-Carb Sausage Biscuits


When we think of cheesy sausage biscuits, Southern Buttermilk Biscuits made with sausage patties and plenty of carbohydrates come to mind.

However, we have a recipe for a low-carb version, that tastes just as Southern, as Grandma's homemade biscuits.  

Our biscuit dough is very similar to that of our pizza dough used to make Smokey's Cheesy Pizza.

The only difference is the addition of Carbquik.  

The ingredients we purchased were:

  • 4 oz. or 1/2 block of Cream Cheese
  • 4 Cups + 1/4 Cup of Shredded Cheese of Choice
  • 4 Eggs
  • 2 Cups of Carbquik
  • 1 Pkg. of Sausage (we used Portuguese Sausage)
  • 1/2 tsp. Black Pepper
We'll begin by placing our cream cheese in our mixing bowl and will melt in our microwave for 30 seconds.




We'll then, add our eggs,  2 cups of cheese, pepper, and will stir until fully blended.





Next, we'll add our Carbquik and will once again, stir until well mixed.



We'll then, form our dough into a ball and will place on our plate.


Since our muffin pan has room for 12 biscuits, we'll cut our dough into 12 equal pieces.






We'll next, spray our muffin tins with our cooking spray and will preheat our oven to 400F degrees.



Now, we'll roll each piece of dough into a ball and will place them into our muffin cups.


In order to stuff our biscuits with sausage and cheese, we'll make an indentation into each one, with our thumb.



We'll then, cut our sausage into thin slices and will insert 2 pieces into each biscuit.





Next, we'll place 1/2 our remaining shredded cheese on top of our sausage.



Now, we'll wrap our dough around our sausage and cheese and will pinch the top of each biscuit.  This will ensure that our cheese will not escape.



We'll then, place our biscuits into our oven for 15 minutes or until they have slightly browned.



As the aroma from our soft and cheesy biscuits begin to permeate our apartment, we'll remove our pans from our oven, salivating.  ๐Ÿ˜‹๐Ÿ˜‹


Next, we'll top our biscuits with our remaining cheese and will re-bake for just a couple of minutes, or until our cheese has melted.



Voila!!



Our soft and cheesy low-carb sausage biscuits are ready for consumption!  

Each biscuit is flaky, moist, and delicious!  They just fall apart in your mouth, with each bite. 

We've even added melted butter to our savory biscuits for added flavor.

MMMmmmmmmm!  Yummmmmy!!

We were afraid that we were going to finish these biscuits in one setting, but decided to eat in moderation.  ๐Ÿ˜€

So, we placed our leftovers into our refrigerator.

When we decided to eat another, we merely placed our biscuit into our microwave for 30 seconds and they were just as good as freshly baked!

Smokey's Homemade Sugar-Free Chocolate Peanut Butter Candies


Who knew that making candies would be as easy as 1-2-3 or that the flavors would be creamy, rich, and absolutely fabulous?!!

We think that our Chocolate Peanut Butter Candy tastes just like the real thing.  

Our Coconut Oil, in addition to our other ingredients, offers a smooth and delicate texture to our rich and creamy candies.

Our recipe only called for a few ingredients and took us only 10 minutes to create. Refrigeration time was another 45 minutes to 1 hour.

Our ingredients included:


  • 4 Heaping Tbsp. of Sweetener
  • 3 Tbsp. Unsweetened Cocoa
  • 1 tsp. Vanilla
  • 1/2 Cup Peanut Butter
  • 1/2 Cup Coconut Oil
We'll begin by melting our Coconut Oil and Peanut butter on low heat, in our skillet







Once our mixture liquefies, we'll add our Cocoa, sweetener, and will stir, until well blended.




We'll then, remove our skillet from our heat, add our vanilla, and will once again stir, until thoroughly mixed together.





Next, we'll pour our liquid into our measuring cup.  

This will allow us an easier time to pour our chocolate into our candy molds.




Next, we'll pour our liquid into our cute molds that we purchased through Amazon.com. 

After pouring our liquid into our molds, a significant amount of chocolate remained. We therefore, poured the remaining liquid into our paper cupcake liners.




We'll, then, line our pan with a paper towel, so that our molds will not slide, place our molds onto a large pan and set in the refrigerator for 45 minutes.




We'll then, remove our molds from the refrigerator and place our chocolates onto a plate.


Our chocolate peanut butter flavors are out of this world!!  

Our candies are silky, rich and have a creamy peanut butter flavor.  They also offer a sweetness that does not taste like a typical sugar-free candy.  

Each piece offers a bit of decadence and paradise.  

And with less than 1 gram of carbs, each, these are amazing candies.
