Smokey's Low-Carb Below-the-Border Taco Fiesta Pizza


Everybody loves pizza day!  Since, we've been visiting my brother at the hospital this past week, We've seen various types of pizza being sold in the cafeteria each day.  

Although we have been tempted to devour the entire cafeteria pizza, we've been good boys.

Instead, we thought we would eat healthier.

We have an excellent recipe for a low-carb pizza, but with a taco flavored twist - Smokey's Low-Carb Below-the-Border Taco Fiesta Pizza.

The crust is made from cheese and eggs, but smells, looks, and tastes like a real carb-full pizza!

 However, unlike most pizzas, we enjoy topping ours with sour cream, avocado, and salsa. 😊

We always like to cook a double batch. So, if you would like to make only 1 pizza, merely divide the ingredients in half.

Preparation time is about 15 minutes, while cooking time is another 45 minutes to 1 hour.

The ingredients we purchased were:




  • 6 Cups Shredded Cheese of Choice 
  • 4 Avocados
  • 4 Tbsp. Chili Powder
  • 4 Eggs
  • 2 Tbsp. Cumin
  • 2 Tbsp. Sweetener
  • 2 4oz. Cans of Mushrooms
  • 2 8oz. Cream Cheese
  • 1 Large Can Chopped Black Olives
  • 1 Family Size Pkg. Ground Beef
  • 1 Large Can Tomato Sauce
  • 1 Large Chopped Onion
  • 1 Chopped Green Pepper
  • 1 Tbsp. Salsa + Extra for topping individual slice of pizza
  • 1 tsp. + 1/2 tsp. Garlic Powder
  • 1/2 Cup Parmesan Cheese
  • 1/2 tsp. Lime Juice
  • 1/2 tsp. Oregano or Italian Seasoning
  • Sour Cream for topping individual slice of pizza

We'll begin by placing our ground beef, 1/2 of our chopped onion, 1 tsp. Garlic Powder, Chili Powder, and Cumin in our skillet, will stir, and cover. 








We'll then, cook our beef on medium heat until our meat has fully browned. 


Next, we'll place our ground beef aside and will begin to make our low-carb pizza crust.

This will be done by placing our cream cheese, eggs, Parmesan cheese, Garlic Powder, Oregano, and shredded cheese together in a large mixing bowl.  






We'll then mix the contents together, until well blended.

 If our cream cheese bricks are not at room temperature, we might have trouble blending the ingredients.  

However, we will usually microwave the contents for about 1 minute and will then, continue stirring.  

That always seems to work like a charm.




Next, we’ll spray 2 of our 8 x 13-inch baking pans with cooking spray before lining them with Parchment Paper. 

 Although Parchment Paper is a non-stick surface, we will still spray our paper with cooking spray, just to be certain our mixture will not stick.





We'll then, divide the mixture in half.  

We'll place one half in the middle of our first baking pan and the other half in the middle of our second.

  Using a spoon, we'll spread the mixtures evenly around the pan, until fully covered.  



Next, we'll place our pans in our oven on separate racks and will bake at 350F for about 20 minutes or until slightly browned.


Once our crust has slightly browned, we'll remove them from our oven and will allow them to rest for a few minutes.



Now, it’s time to flip our dough onto each pan.

We'll merely take one of the long sides of the parchment paper and will carefully, flip the dough over and onto our pan.




Next, we'll pour 1/2 of our can of Tomato Sauce in the middle of each of our crusts.  

Using a spoon, we'll spread the sauce over most of our crust, leaving a tiny border un-sauced.  



Since the Tomato Sauce is unsweetened, we will sprinkle 1 Tbsp. of Sweetener over each of our pizzas.   


Next, we will sprinkle a tiny layer (approx. 1 cup) of Shredded Cheese over our entire pizza crust to cover our sauce.  


We'll then, divide half of our taco seasoned hamburger, placing 1/2 on one crust and 1/2 on our other crust. 




Next, we'll add the other half of our chopped onions, green peppers, and mushrooms evenly to each pizza.




We'll then slice our olives and will also evenly spread onto both pizzas.





Finally, we'll sprinkle extra cheese over each pizza to seal the deal. 

As you can tell, we LOVE our melted cheese.  


We’ll once again, place our pans back in our oven and will bake at 375F for an additional 20 minutes or until the cheese has slightly browned.  



While our pizza is resting, we'll make our Guacamole.

We'll begin by pitting our avocados and placing them in our tiny mixing bowl.





We'll then, smash our avocados and will add our lime juice, salsa, and will beat with our fork until our mixture is creamy.






Voila!  Our basic Guacamole is ready!

Next, we'll slice our pizza and will add our Guacamole, Sour Cream and Salsa.



Yuuuuuuuuuuuuum!  We feel as if we are dining at a Mexican Restaurant!  

Our low-carb pizza dough is soft, cheesy, and tastes just like real crust!  

The mix of our taco flavored hamburger and fresh vegetables offer a Below-the-Border experience.  

And there's enough pizza to usually last us for 2 nights.
