Smokey’s Sinful Low-Carb Chocolate Covered Peanut Butter Cheesecake Bites.


One of our favorite food groups are chocolate and peanut butter. 

 The combination of the 2 are even better and are definitely our slice of Heaven.

We discovered a decadent, rich, and, creamy mix of cream cheese, chocolate, and peanut butter all in one recipe.  They kind of resemble a chocolate peanut butter cup with a cheesecake middle. 

These bites are super yummy and simple to make.

Preparation time was a mere 10-15, while refrigeration time another 50 minutes.

This week’s ingredients were:


  • 8 oz. Cream Cheese
  • 1 Cup Sweetener
  • 6 AmazonBasics Reusable Silicone Baking Cups
  • 1 tsp. Vanilla
  • 1 pastry brush
  • 2 tsp. Coconut Oil
  • 3/4th Cup Sugar-Free Chocolate Chips
  • 1/4th Cup Peanut Butter
  • 1/4th Cup Heavy Whipping Cream

We'll begin today’s recipe by placing our cream cheese into our mixing bowl and softening in our microwave for 1 minute.




We'll then, stir in our sweetener, peanut butter, vanilla, and will beat until thoroughly mixed.  







Now since our cheesecake mixture is finished, we’ll place aside.

Next, we’ll place our chocolate chips and coconut oil in our saucepan and will melt on low for about 5 minutes, or until our chocolate has liquefied. 







We'll then, place our cupcake holders into our cupcake pan. 

We found some silicone cupcake holders, from Amazon, that were easier to use.


Next, we will coat the bottom and sides of each holder with our chocolate, using a brush, and will place in the freezer for 5 minutes.






We'll then, re-coat our cupcake holders with more chocolate to create a thicker coating, surrounding our cheesecake bites. 

We'll then reinsert our cupcake holders back into our freezer for an additional 10 minutes.





Now, it’s time to fill each cupcake holder 3/4ths of the way to the top with our cheesecake mixture.




After all our cheesecake cups have been filled, we’ll cover them with our remaining chocolate syrup, and will again place in our freezer for another 20 minutes..

  If your chocolate has begun to thicken, merely return it to the burner for a minute or two to re-melt.





I think the longest part of this recipe is the freezer time.  😆

Believe it or not, our bites of chocolate peanut butter decadence is ready for our consumption!!



We could not believe how absolutely yummy are these PB cheesecake bites and actually think we'll be making a double batch next time. 

The chocolate melts in our mouths just in time to take a bite of our creamy peanut butter cheesecake center.

This is definitely a recipe we'll be saving for the our future cook book.

Giraffe's Cheesy Low-Carb Parmesan Broccoli Bites


As the first snowfall of the season is predicted for tonight, here in Minneapolis, we've been looking for a warm dish to create.  Something cheesy and scrumptious would delightfully tempt our palates and keep us cozy.

We've decided to create our Cheesy Low-Carb Parmesan Broccoli Bites.  These yummy, crispy, and somewhat healthy vegetable bites will definitely satisfy this week's cravings.

Our preparation time is about 5-10 minutes and cooking time another 30 minutes.

Our purchased ingredients include:

  • 16 oz. of Thawed Frozen Broccoli
  • 2 Eggs
  • 1 1/4 Cups of Carbquik
  • 1 Tbsp. Heavy Whipping Cream
  • 2/3 Cup Parmesan Cheese
  • 3/4 tsp. Paprika
  • 1/2 tsp. Baking Powder
  • 1/4 tsp. Ground Pepper
  • 1/8 tsp. Cayenne Pepper
  • Cooking Spray
We'll begin by placing our eggs in our bowl and will beat with our fork, until fully beaten.




We'll then add our whipping cream, will continue beating, until fully blended, and will set aside for now.



Next, we'll place our Carbquik, Parmesan Cheese, Baking Powder, Ground Pepper, Paprika, and Cayenne Pepper in our mixing bowl and will whisk, until fully blended.

Whisking our mixture will allow us to break up any lumps in our powdered ingredients.










We'll, then cover our baking pan with our aluminum foil, will spray with our cooking spray, to prevent our broccoli from sticking, and will preheat our oven to 425F degrees.




Next, we'll place our broccoli in a bowl and will place next to our egg mixture, dry mixture and baking pan.  

This will allow for easier dredging and hopefully, minimizing our mess.




We'll then, fully submerge our broccoli into our egg mixture, will dredge through our dry mixture, and will place onto our baking sheet.







Next, we'll spray our cooking spray over our broccoli pieces and will bake in our oven for 30 minutes, or until golden brown.




Voila!!

Our buttery broccoli appetizers have finished baking!



Each piece of broccoli is golden brown and crispy on the outside, while exploding of soft and cheesy, broccoli flavor on the inside.  

Our broccoli never stood a chance with us!  

We devoured our entire tray in a matter of 5 minutes.  😋
