Smokey's Sweet and Spicy Low-Carb Hamburger Cabbage Stir Fry


Every once in awhile our sweet tooth acts up and we crave something sweet. Not always do we crave the sweetness in the form of desserts. This week, our cravings were for Asian-style cooking. 

We've been hearing about a "Crack Slaw" recipe on the Web this year and finally decided to create this dish, adding our own spin.  And I'm glad we did! 

Our stir fry has an incredible Asian Flare, with our sauce having a slightly spicy Teriyaki Flavor.

Our dish was very easy to make, having a preparation time of only 5 minutes and cooking time another 25 minutes.  

At first, we were going to use Cholula Hot Sauce to increase the heat in our dish. However, we decided to use Sriracha Sauce, instead, to keep with our Asian Flare.  

That's why you'll initially, notice the Cholula Sauce in our first picture and then, the Sriracha Sauce in the subsequent picture.

Our ingredients for the week are:



  • 2 Packages of Cole Slaw
  • 2 Tbsp. Sesame Seeds
  • 2 Tbsp. Sesame Oil
  • 2 tsp. Minced Garlic
  • 2 tsp. Vinegar
  • 1 Pound of Ground Beef
  • 1 Tbsp. Sriracha Sauce
  • 1/2 Cup Soy Sauce
  • `1/2 Cup Sweetener
  • 1/2 tsp. Pepper
We'll begin by cooking our Ground Beef in our covered skillet, on medium heat for about 15 minutes, or until fully browned.




After our beef has browned, we'll drain our grease, and will return our skillet to our stove.


Next, we'll move our hamburger to one side, will pour our Sesame Oil and garlic into the other side, and will cook for 5 minutes.  

We'll continue to stir our garlic, so that our garlic does not burn.

We didn't add our oil to our Ground Beef, at the beginning of our cooking process because we wanted to keep our Sesame Oil flavor within our meat.  Had we added our oil in the beginning, we would have drained our grease, Sesame Oil, and its flavor.








We'll now, mix our garlic and oil with our hamburger and will add our Cole Slaw, Sriracha Sauce, Soy Sauce, and will stir until completely blended.

We initially added only 1 Tbsp. of Soy Sauce. But, later determined that we really enjoyed an increased Soy flavor.  Therefore, we added a total of 1/2 cup of Soy Sauce to our mixture.  









We'll continue to add our vinegar, pepper, and sweetener to our cabbage mixture and will stir until well blended. 

Initially, we only added 1/2 tsp of sweetener to our dish. However, we decided that we enjoy a sweeter stir fry.  Therefore, we added a total of 1/2 cup of sweetener to our mixture.







We'll then, cover and cook for 5 more minutes or until our cabbage has softened to our liking.  



Voila!!!

Our dish is ready to be delightfully devoured!  


Our sweet and spicy hamburger cabbage stir fry is amazing!!  


And to add a little more texture and flavor to our stir fry, we'll sprinkle Sesame Seeds on top of our dish. 


The Teriyaki flavor, along with the subtle spice from our Sriracha Sauce, complements our hamburger cabbage dish very well.


Well, our stir fry has definitely satisfied our sweet tooth and has become one of our favorite "Asian" meals.

Giraffe's Saucy Low-Carb Italian Stuffed Peppers


We love dining on our fresh Bell Peppers, stuffed with Grandma Giraffe's Old World Spaghetti Sauce.  Mmmmmmmmm!  

Our crispy and juicy peppers, moistened with our hearty tomato sauce makes for an enjoyable and comforting dinner, especially on cold winter nights.

We thoroughly enjoy the aroma of our Italian Stuffed Peppers baking and delightfully permeating our apartment.  

Preparation time was a mere 10 minutes, while baking time another 40 minutes.

This week's ingredients include:





We'll begin by preheating our oven to 400F degrees and will spray our baking dish with our cooking spray.




Next, we'll slice the tops of our Green Peppers, and will scrape out and discard their insides.



We'll then, rinse out our peppers to ensure they are clean for stuffing and will place in our pan.



We'll bake our peppers, by themselves, for 20 minutes, to initially soften them, before adding our remaining ingredients.



Next, we'll remove our peppers from the oven and will pour 1/4th cup of our Spaghetti Sauce into each pepper.




We'll then, place 2 Tbsp. of Ricotta Cheese into each pepper, followed by another 1/4th cup of Spaghetti Sauce on top of our cheese.







Next, we'll take a large pinch of our shredded Mozzarella Cheese and will sprinkle on top of our Spaghetti Sauce.


We'll finally, return our stuffed peppers to our oven, to bake for about 12 minutes.



After our cheese has melted, we'll remove our peppers from our oven and will sprinkle 1 Tbsp. of Parmesan Cheese over each pepper.





We'll then, sprinkle another round of Mozzarella Cheese over each pepper.


Next, we'll sprinkle our Oregano over our cheese.




We're then, going to return our peppers to our oven, one more time, for 5 minutes,  allowing our cheese just enough time to melt.



We'll again, remove our peppers from our oven and will allow them to slightly cool.



We'll then, reheat our Spaghetti Sauce and will place our remaining 1/4th cup over the top of each pepper.


Voila!!!! 

Our Stuffed Saucy Low-Carb Italian Stuffed Peppers are ready to be devoured!  😋

Our Green Peppers are soft, but yet crisp and juicy.  The three cheeses, along with the homemade Spaghetti Sauce makes our Stuffed Peppers taste similar to Lasagna Stuffed Peppers.  

Who needs noodles or rice inside our peppers when they exude flavor?
