Smokey's Low-Carb Sour Cream Chocolate Chip Cookies


We have been feeling like Cookie Monster, craving chocolate chip cookies, for the past couple of weeks (Nom nom nom nom).   πŸ˜…πŸ˜…πŸ˜…

We've heard of adding sour cream to cake recipes.  However, we haven't heard of adding sour cream to cookie dough.  So, we thought we would try our luck at creating Low-Carb Sour Cream Cookies, but with added Sugar-Free Chocolate Chips.

We were pleasantly delighted with our moist and flavorful cookies.  They just melted in our mouths.

Preparation time was  5-10 minutes, while baking time was another 20 minutes 

Our ingredients for our cookies are as follows:


  • 2 Eggs
  • 1 Bag of Sugar-Free Chocolate Chips
  • 1 Stick of Margarine
  • 1 Cup Sweetener
  • 1 tsp. Vanilla
  • 1 tsp. Baking Powder
  • 1 tsp. Xantham Gum
  • 3/4th Cup Carbquik
  • 3/4th Cup Sour Cream
We'll  begin by melting our Margarine in our microwave for 1 minute.




We'll then, pour our melted Margarine into our mixing bowl.


Next, we'll add our sweetener, eggs, and vanilla and will mix with our electric mixer for about 1 minute or until all has been well blended.







We'll then, add our Baking Powder, Xantham Gum, Carbquik, and will again mix with our mixer for 1 more minute, or until well blended.









Next, we'll add our sour cream.


Once again, we'll blend with our mixer, until the sour cream has been fully mixed together.



Finally, we'll add our last and most important ingredient - our Sugar-Free Chocolate Chips!




This time, we'll just stir our chips into our mixture, until they are completely mixed together.


We'll then preheat our oven to 350°F and will spray our Aluminum Foil lined baking pans with cooking spray.



Next, we'll use our small ice cream scoop and to scoop our batter onto our cookie sheet, placing our cooking dough mounds about 1 inch apart from the next.





We'll then, place our cookie dough in our oven and will bake for 15 minutes or until their bottoms have slightly browned.

We'll use our slotted spatula to gently pick up our cookies, to see if their bottoms have browned sufficiently.  If they have not, we'll return our cookies to our pan and will continue baking in 5 minute intervals.


In our case, our cookies were browning too fast at 350°F.

We therefore, lowered our oven temperature to 325°F and continued baking for another 5 minutes.


Voila!

Those 5 minutes on a lower temperature were the key.

Our cookies have sufficiently browned and are ready to be devoured.  NOM NOM NOM NOM!  


We enjoy our cookies when they are soft and chewy, opposed to those that are crispy. With that being said, our cookies don't always look like they are done. 

But, when we check their bottoms, they have, in fact, slightly browned.


Each bite is absolutely deeeeeelicious!  Our cookies are moist, chunky with our chocolate morsels, and are full of flavor, with just a hint of vanilla. 

We had to stop ourselves from eating more than a couple of cookies, in one setting. πŸ˜†πŸ˜†πŸ˜…

They are THAT delicious!

Giraffe's Sweet and Sassy Low-Carb Brown Sugar


There have been many a times I have found a yummy recipe that required brown sugar.  

When checking the sugar content of store bought low-carb brown sugars, we've been surprised at how high they have been.

However, we've found a recipe for our own low-carb brown sugar that only contains 4 grams of carbs per 1 cup. 

Although our sugar doesn't have the same appearance as brown sugar, its sweet flavor is almost identical!  

Our recipe was very simple to create, at only less than 5 minutes of preparation time.

Our ingredients include:


  • 1 Cup of Sweetener of Choice
  • 1 tsp. Maple Flavoring
  • 3/4th tsp. Molasses
We'll begin by pouring our sweetener into our mixing bowl and will simply add our Maple and Molasses.






Next, we'll take our fork and will stir our mixture.

Our sweetener will mat and somewhat solidify where our liquid has been poured.  

So, we will mash, cut, and stir those solid chunks with our fork, for a few minutes, until our mixture resembles typical store bought brown sugar.  



Voila!!

The addition of our tiny amount of Molasses to our sweetener is just enough to give our "sugar" the aroma and flavor of brown sugar.

We couldn't believe the tastiness of our creation and completely love using this in our recipes.

Giraffe's Low-Carb Strawberry Daiquiri by the Pool


There's nothing like sitting by the pool on a hot summer day, enjoying a frozen daiquiri.

We thoroughly enjoy our Low-Carb Strawberry Daiquiris that not only quench our thirst, but also tantalize our taste buds.

The fresh strawberry flavor, coupled with the hint of lime and rum, tricks out minds into thinking we are drinking the real thing.  However, our bodies know that they contain hardly any carbs.

Preparation time is less than 5 minutes, while blender to mouth time is only 1-2 minutes.

Our ingredients includes:


  • 6-8 Ice Cubes
  • 7 Strawberries
  • 1 1/2 Shots Clear Rum
  • 1 Shot Lime Juice
  • 1/2 Cup of Lemon Flavored Soda Water (or flavor of choice)
  • 1/4th Cup Sweetener of Choice
We'll start out by placing our ice cubes in our food processor and will place aside.


Next, we'll top 6 of our strawberries, leaving 1 aside for our later garnish.



We'll then, place our topped strawberries, Soda Water, Lime Juice, rum, and sweetener in our food processor and will cover.










Next, we'll blend on high for 1-2 minutes or until our mixture has fully liquefied and our ice has been completely crushed.

Just a little note:  The last time I crushed ice in our food processor, I merely covered the processor and pressed the high button.  Suddenly, the cover flew off and the mixture spewed all over our immediate area. πŸ˜…πŸ˜…

Boy, what a mess I made. πŸ˜…

In other words, make certain to tightly hold your cover, to avoid any catastrophes. πŸ˜…




Now that was easy!  Our mouths are drooling in anticipation of our fabulous daiquiris! 

We just have one more addition and our cocktails are ready..


We'll garnish our beverage with a fresh strawberry, to make our daiquiri complete.


Oh boy! Our Daiquiris are sweet, full of strawberry flavor, and only offers a hint of rum.  

The rum is definitely present, but, can hardly be tasted.  That's the sign of a good daiquiri.   


We always try not to drink too many, as they taste mighty fine!  However, we don't want the liquor to unexpectedly sneak up on us.  πŸ˜†πŸ˜…πŸ˜†
