Smokey's Smokin' Low-Carb Pumpkin Fritters


Who doesn't love the creamy taste and subtle sweetness of the many pumpkin desserts, this time of the year?!!

Even after the Thanksgiving Day Holiday, pumpkin still manages to peek out of our refrigerators and our cupboards, in many forms. 

Since our posting of our Pumpkin Mousse, we've discovered yet, another way to disguise pumpkin in a sweet setting ~ Smokey's Smokin' Low-Carb Pumpkin Fritters.

Each bite offers a crispy and light, yet sweet and chewy pumpkin donut flavor.  

Preparation time is only 5 minutes, while cooking time, another 5-10 minutes.

This week's yummy ingredients include:



  • 2 Cups of Vegetable Oil
  • 2 Cups Sweetener of Choice
  • 2 Tbsp. Cinnamon
  • 2 tsp. Baking Powder
  • 1 Cup Pumpkin
  • 1 Cup Carbquik (bought from Amazon.com)
  • 1 Egg
  • 1 tsp. Vanilla
  • 1/4 Cup Heavy Whipping Cream
  • 1/4 tsp. Salt

We'll begin, by combining our Carbquik, Pumpkin, Baking Powder, 1 cup of our Sweetener, Salt, Egg, Heavy Whipping Cream, and Vanilla in our mixing bowl and will place aside. (Very simple)












We'll then, turn our burner to medium heat, will place our small pot on our stove, and will fill with 1/2 inches of Vegetable Oil.


We'll then, allow our oil to heat, before adding our batter.

After about 5-10 minutes, our oil will slightly smoke and tiny bubbles will form around the edges of our pot.

That will be our indication that our oil has sufficiently heated and is awaiting our pumpkin fritter batter.


Next, we'll scoop about 1 Tbsp. of batter and will drop into our heated oil.



We'll allow our batter to cook for about 5-8 minutes, or until their bottoms have turned golden brown.



Once the bottoms of our fritters appear to have turned a lovely golden brown, we'll gently turn them over to cook for another 2-3 minutes.


Although, our fritters may seem under cooked, we'll still remove them from our oil and will place on our paper towel lined plate.

*We flipped over our 1st batch and continued cooking until both sides were golden brown.  However, our result was a crispier fritter, that lacked moisture and flavor.

So, for our 2nd batch, we decided to flip our fritters and to fry them for only 3-5 minutes. Although the top seemed under cooked, they were JUST right!  

Our fritters were soft, chewy, and were full of flavor*

The paper towel lined plate will collect any remaining oil from our fritters.  



As our fritters were frying, we mixed 1 cup of our Sweetener and our Cinnamon together in our bowl, and placed aside for later.

We'll eventually roll our fritters in our lovely and sweet Cinnamon and faux sugar mixture.




Once our fritters have rested on our paper towel, for about 1 or 2 minutes, we'll thoroughly roll each  in our sweetener mixture, until fully covered.



We'll then, place on our serving plate and will continue coating the remainder of our fritters.


Voila!

Our soft, chewy, moist, and yet flavorful pumpkin fritters are ready for our drooling mouths!!

Although our fritters may be served at any temperature, they are probably best served HOT!  

Our fritters remind us of a version of Hawaii's Malasada's.  


Each bite offers a delightful combination of pumpkin, sweetness, and a hint of Cinnamon, all in one! 

We found ourselves devouring more than a couple at one time.

Giraffe's Terrific Low-Carb Turkey Tetrazzini (with Almond Flour)


Here we are, a few days before Thanksgiving and most of us are already worrying about what to do with our overabundant supply of turkey leftovers.  '

Many of us are usually bored with eating our leftover turkey with gravy.

Well, we've discovered a way to avoid the monotony.

Say goodbye to boring turkey leftovers and hello to Giraffe's Terrific Low-Carb Turkey Tetrazzini!

We've baked a delicious, rich and saucy Turkey Tetrazzini casserole, without using pasta.

Instead, we've incorporated our Cheesy Smashed Cauliflower into yet, another recipe.  

This recipe might take a little longer than our other recipes. However, it's well worth the wait. My mother and husband agree, as this is one of their Post-Thanksgiving favorites.

Preparation time is about 15 minutes, while cooking time is roughly 1 hour and 20 minutes. 

All that is needed for this recipe are the following ingredients:


  • 4 Cups of Shredded Left Over Turkey
  • 3 Cups of Chicken Broth
  • 3 Cups of Cheesy Smashed Cauliflower
  • 2 Cups of Heavy Whipping Cream
  • 2 Cups of Shredded Cheese of Choice
  • 2 - 4 oz. Cans of Mushrooms
  • 1 2/3 Cup of Parmesan Cheese
  • 1 Stick of Butter or Margarine
  • 1/2 Cup of Almond Flour
We'll begin by melting our stick of margarine on medium heat, in a large pot.




We'll then, add our Almond Flour and will stir, until completely blended.





Next, we'll add our Chicken Stock, Heavy Whipping Cream, and will bring to a boil.

We'll continue stirring our mixture, so that our liquid does not curdle and burn.







As soon as our liquid begins to boil, we'll add our 1 1/3 cups of Parmesan Cheese, stir, and will remove our pot from our heat.




We'll then, pour our turkey and Cheesy Smashed Cauliflower into our mixture and will stir.







Next, we'll preheat our oven to 350F degrees and will spray our baking pan with cooking spray.



We'll then, pour our turkey mixture into our greased pan, add our mushrooms.and will stir.  



Next, we'll sprinkle 1/3 cup of Parmesan Cheese and 2 cups of Shredded Cheese over our mixture, and will bake for 1 hour, or until slightly browned.





After the top of our casserole has slightly browned,  we'll remove our dish from our oven,  and will allow our tetrazzini to cool and thicken, for about 30 minutes.  


Our dish is absolutely Deeeelish!  

As our casserole was baking, its aroma was not only permeating our apartment, but was also tantalizing our tastes buds!


Completely unbelievable how our dish tastes just like a turkey and rice casserole, although rice is not present.
