Giraffe's Flourless Cinnamon Pancakes


Good morning all!  It's time for breakfast.....or a midnight snack, depending on your cravings.  😅

We haven't eaten pancakes for quite some time because of their high carb count.  However, we recently discovered a recipe for flour-less pancakes. Not only do they look like your typical pancakes, But, they smell and taste absolutely delightful!!

There are only a few ingredients involved and they are:


  • 8 oz. Cream Cheese
  • 6 Eggs
  • 5 tsp. Baking Powder
  • 3 Tbsp. Cinnamon
  • 3 tsp. Vanilla
  • 1 Cup Sweetener

We'll start by placing our cream cheese in our mixing bowl and will then, soften in our microwave for 1 minute. 

This will allow our cheese to easily mix with our remaining ingredients.  


Next, we'll add our eggs and will mix them with our cream cheese.


We'll then, add our cinnamon, sweetener, baking powder, vanilla and will again stir, until all is well blended. 





Next, we'll spray our skillet with cooking spray and will place on our stove on medium heat.  

Once our skillet begins to slightly smoke, we'll begin to pour or spoon our batter.  


As our pancakes cook, bubbles will begin to form, all throughout.

As the formation of our bubbles begin to slow or stop, the bottom of the pancakes will start to slightly smoke. 

This is our indication that we are ready to flip our cakes.




Next, we'll allow our pancake to rise for about a minute, or so.  

We'll then, continue making our pancakes until our batter has been depleted.  



We now have our stack of pancakes that we are ready to eat! 


Of course, we like to top our pancakes with margarine or butter and sugar-free pancake syrup.


YUUUUUMY!!!  

Oh my gosh...our taste buds are delightfully dancing from the aroma of maple and butter.

Each bite is just melting in our mouths! 

Our low-carb pancakes are merely scrumptious and out-of-this-world!!  


Who would ever believe that low-carb pancakes would have such flavor!

Giraffe's No-Bake Low-Carb Peanut Butter Protein Bars


We're always searching for protein bars that are not only low-carb, but that also have a delicious flavor.  😅

Friends are always discovering new and super tasty protein bars. However,  they usually contain 45 grams of carbs per serving.

Well, we've discovered a protein bar that tastes absolutely delicious and only contains 32 grams of carbs for the entire batch.  That translates to only a few carbs per bar, depending on how large we slice them.

Not only do our protein bars taste creamy.  They also taste like peanut butter cubes.  And...their flavor is nothing like those store bought low-carb bars that resemble cardboard.

Preparation time is only 5-10 minutes. And since there is no cooking time, we merely refrigerate our mixture for 30 minutes.  

Our delicious ingredients include:


We'll begin by adding our Coconut Oil, Peanut Butter, and Cream Cheese to our mixing bowl and will melt in our microwave for 30 seconds. 

Melting our mixture, will allow our ingredients to easily blend together.









Next, we'll stir our ingredients together, until they are well blended.



We'll then, add our Peanut Butter Powder, Sweetener, Carbquik, and Vanilla, and will stir until our mixture is mixed thoroughly.






Next, we'll spray our 8 inch by 8 inch baking dish with our cooking spray.  



We'll then, pour our "batter,"  spreading evenly throughout our pan.




Now, it's time to place our protein bars in our refrigerator for about 30 minutes, so that they may solidify.  


Voila! 

Our protein bars are ready for consumption!


Since our entire dish offers 32 grams of carbs, we'll cut our batch into 8 pieces, so that they will only contain 4 grams each.  


Eat bite offers a creamy and rich taste of our peanut butter flavored cream cheese and keeps our tummies filled, in between meals.

SO hard to believe that these tasty morsels have so little carbs. However, we're very happy they do.  😃

Giraffe’s Texan Low-Carb Beanless Chili


Chili is another one of our go-to easy dishes, that we absolutely adore.  We always pair our delicious low-carb Chili with our Smashed Cauliflower, as it seems to substitute well for rice.

Through the years, we’ve created this thick and meaty low-carb chili, using a mix of both fresh and canned vegetables.  Every once in a while, we’ll rummage through the fridge looking for ingredients to add that will enhance its flavor. 

Preparation time for our chili is about 10 minutes, while cooking is another 45 minutes to 1 hr. 30 minutes, depending on your consistency liking.

Our delicious ingredients include:

These are the ingredients for our scrumptious chili:
  • 4 Heaping Tbsp. Chili Powder
  • 4 Roma Tomatoes
  • 2 - 8 oz. Cans of Tomato Sauce
  • 2 - 4 oz. Cans of Sliced Mushrooms
  • 2 Tbsp. Cumin
  • 2 tsp. Garlic Powder
  • 1 Family Pack of Ground Beef
  • 1 Cup Parmesan Cheese
  • 1 Cup of Reduced Sugar Ketchup
  • 1 Heaping Tbsp. Mayonnaise
  • 1 Tbsp. Worcestershire Sauce
  • 1 tsp. of Italian Seasoning
  • 1 tsp. Paprika
  • 1 tsp. pepper
  • ½ Chopped Medium Onion
Since we enjoy eating leftovers, we try to cook larger portions.

We'll therefore, begin by frying our family pack of ground beef with our onion and garlic powder on medium heat in a large pan.  




Once our mixture has browned and has thoroughly cooked, we’ll drain our fat into a plastic container and will return our hamburger to our stove. 


 Since we don't have a food processor, we'll smash our tomatoes in our Ziploc Bag and will then add them to our ground beef. 





We’ll then, add our remaining ingredients to our hamburger mixture. 


Adding Mayonnaise also adds to our chili’s richness and flavor.






We also enjoy adding our Parmesan Cheese, as a substitute for thickener. 



Once our remaining ingredients have been added to our pan, we'll stir our mixture until well blended. 

Next, we'll continue to cook our chili on medium heat for the next 20 minutes.  

After cooking our meal for the 20 minutes, we've noticed that our tomatoes appear soft and tender.

At that time, we'll lower our temperature to a simmer and will continue to cook for another 30 minutes, or until we are ready to eat.

We'll also occasionally stir our mixture to avoid our chili from sticking to the bottom of our pan or burning.


And as we've previously mentioned, we thoroughly enjoy eating our chili over rice.

However, since rice has quite a bit of carbs, we’ll pour our chili over our Smashed Cauliflower.  I know some people don't care much for cauliflower, like my brother. However, when he tried our chili, he admitted that he couldn't distinguish between rice or our cauliflower!

Each hearty bite exudes Southwestern Flavors coupled with the rich cheesy flavor of the soft cauliflower.

My husband will even add sour cream, salsa, shredded cheese, and slice avocado to his dish. 

Such a hearty and meaty dish without the carbs!
