We really enjoy a soft and smooth ice-cream after eating a full and hearty meal or as just a snack during the daytime.
Making our own low-carb ice-cream from scratch was also a treat, but a somewhat time consuming task, without having a food processor.
Well, since Santa Claus brought us our very own food processor for Christmas, we thought we would try our hand at creating a low-carb frozen blueberry yogurt.
I'm sure glad we did, because our simple and quick frozen yogurt creation has hit the spot!
Our recipe only calls for 5 ingredients, a preparation time of a couple of minutes, and a processing time of 5 minutes.
The ingredients for our recipe includes:
- 2 Small Containers of Blueberries (Placing a couple of blueberries aside for later, to use as our topping)
- 2 Small Containers of Greek Yogurt (Your choice of flavors - we used Vanilla and Blueberry)
- 2 tsp. Lemon Extract
- 1 Cup of Sweetener
- 1 Tbsp. Lemon Juice
We'll begin by simply adding all of our ingredients to our food processor - our yogurt, sweetener, juice, extract, and blueberries.
We've added Lemon Extract to our yogurt to bring out the flavor in our blueberries and to add just a little zest to our yogurt.
We'll next, cover our food processor and will blend on high for 5 minutes, or until our mixture has become creamy and has thickened.
We'll then, remove our cover, pour our mixture into our bowl of choice, and will place in our freezer for 1 hour or greater, depending on our desired consistency.
This has to be one of our easiest recipes we've created thus far, without compromising flavor and deliciousness. 😤
We thoroughly fancy the creamy, tangy, and smooth essence of our yogurt, with each bite.
Our Lemon Extract has definitely emphasized the flavors in our sorbet-like dessert, tempting our taste buds for more excitement.
The added blueberry toppings, also accentuate the freshness of our light and low-carb frozen yogurt.
Voila!
Another yummy dessert is at our beck and call, in a little over 1 hour!
